Bevo’s Baking Show

Sturt Women’s Co-Captain Georgia Bevan is a health and nutrition whiz, and has generously shared with us her Banana Chocolate Muffins recipe.

Bevo’s Banana Muffins

Makes 12

2 over ripe bananas, mashed
2 eggs, whisked
160g (small pot) Chobani Fit/YoPro Vanilla
1/3 cup olive oil
3 tbsp honey
2 cups wholemeal wheat/spelt flour
2 tsp baking powder
100g chopped dark choc/choc chips*

  1. Preheat oven to 180C
  2. Combine wet ingredients in a large bowl.
  3. Stir through your dry ingredients, save your chocolate or flavourings until the end. Once your ingredients are combined fold through the choc chips.
  4. Pour into greased muffin tins or a silicone muffin tray.
  5. Bake in a preheated oven for 20 minutes or until golden. Serve warm or let cool, wrap with glad wrap and freeze individually.
    *Can sub for frozen raspberries, blueberries or nuts
